 Sunday Brunch Casserole (saturday morinig) serves6-8 1/2 pound sausage or bacon 1/2cup chopped onion 1/2 cup chopped green pepper (I omited this) 12 eggs 1 cup milk 1- 16 ounce pkg. frozen hashbrowns (thawed) 1 cup shredded cheddar cheese 1 teaspoon salt 1/4 teaspoon pepper In a skillet cook meat till crisp. Remove, drain (if using bacon, curmble) and set aside. Saute onion (& greep pepper if using)Remove and cool. Beat eggs and milk in large bowl. Stir in hashbrowns, cheese, salt, pepper, onions, meat and green pepper( if used). Pour into greased 9 x 13 baking pan. Bake uncovered at 350 degrees for 35 to 45 minutes until a knife inserted in center somes out clean.  French Toast Casserole (sunday morning) Scrumptious casserole of bread, cream cheese, eggs and milk. Tastes just like regular French toast but it's made the night before and baked in the oven. Serve with warm maple syrup. Servings: 16(more like 6 to8) Ingredients: 10 cups white bread cubes 1 (8 ounce) package cream cheese, softened 8 eggs 1 1/2 cups milk 2/3 cup half-and-half cream 3/4 cup maple syrup 1/2 teaspoon vanilla extract 2 tablespoons confectioners' sugar Directions: 1. Place bread cubes in a lightly greased 9x13 inch baking pan. 2. In a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk, half and half, maple syrup and vanilla until mixture is smooth. Pour cream cheese mixture over top of bread; cover and refrigerate overnight. 3. The next morning, remove souffle from refrigerator and let stand at room temperature for 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C). 4. Bake in preheated oven for 30 minutes or until set. Sprinkle souffle with powdered sugar and serve warm.

Hawiian Baked Beans (friday supper) 6 cups cooked white beans( I used great northern) 1 cup chopped onions 1 cup brown sugar 1 cup chopped ham 7/8 cup catsup 1/2 cup curshed pineapple, drained 2 tablespoon prepared mustard 4 teaspoons vinegar 1 tablespoon liquid smoke
Combine all ingredients. Pour in dutch oven and bake 1 1/2 to 2 hours at 350 degrees. Uncover and bake 20 minutes more. 16 servings.

Five Bean Salad (lunch saturday)
1 cup sugar 1/2 cup white vinegar 1 tablespoon oil 1/2 cup chopped onion 6 stalks celery-chopped 1- 15 ounce can (drained) each of: green, lima, yellow, kidney, and pinto beans 4 ounce jar pimentos
Combine sugar, oil and vinegar, mix well. Mix remaining ingredients and add sugar mixture. Toss to evenly coat and refrigerate 6 hours or over night. Stir occasionally to mix. ========================================================================
Key Lime Cheesecake
1 - 14 ounce can sweetened condensed milk 1 cup key lime juice 8 ounces cream cheese (softened) 12 ounce carton cool whip 9" graham cracker crust
Mix milk, key lime juice, and cream cheese till well blended. Stir in cool whip and pour in crust. Chill. Serves six. ========================================================================
Quick Fruit Salad (friday supper)
1 - 20 ounce can chunk pineapple 1 - 20 ounce can peach pie filling 1- 11 ounce can mandrin oranges (drained) 1 cup sliced bananas 1 cup green grapes( I forgot these)
Combine all ingredients except the bananas and chill 6 hours or over night. Just before serving add the bananas. ========================================================================
Asini De Pepe Salad (sunday lunch) ( the one everyone thought was either rice or tapoica)
1 pound asini pepe pasta --cook according to package directions, drain, rinse and cool.
Dressing:
1 cup sugar 2 tablespoons flour 1/2 teaspoon salt 3/4 cup orange juice 3 beaten eggs 1 cup pineapple juice
Mix in 2 quart sauce pan over meduim heat, stirring constantly as it scorches easily--(I used a double boiler)Cook till thickened.. Cool and mix with pasta and chill 6 to 8 hours or overnight.
Then Add:
2 16 ounce cans drained crushed pineapple ( use juice in dressing) 2 11 ounce cans drained mandrin oranges 4 cups cool whip
Freezer Lasagne (saturday lunch)
1 1/2 pound browned ground beef 3 cloved minced garlic 1 tablespoon parsley flakes 1 tablespoom dried basil 1 - 16 ounce can chopped tomatoes 1 - 12 ounce can tomato sauce
Mix above ingredients in a large sauce pan. Bring to a boil, reduce heat and simmer, uncovered, for 30 minutes. Stirring often.
1 - 8 ounce package lasagne noodles-- cooked according to package directions and drain.
2 - 12 ounce cartons cottage cheese 2 eggs, beaten 1/2 teaspoon pepper 2 tablespoons parsley flakes 1/2 cup grated parmesan cheese 12 ounces mozzarella cheese grated
Mix cottage cheese, eggs, pepper, parsley, and parmesan cheese.
Grease 9 x 13 baking dish. Layer 1/2 noodles, 1/2 cottage cheese mix, and 1/2 meat mix, and then 1/2 mozzerella cheese. Repeat layers.. Wrap dish for freezer and freeze. To cook, THAW completely. Bake uncovered in 375 degree oven for 35 to 40 minutes.

2 LB. BAG FROZEN HASH POTATOES, THAWED
1 STICK MARGARINE, MELTED
1-CAN CREAM OF CHICKEN SOUP
1/2 CUP CHOPPED ONION

2-CUPS SHREDDED CHEDDAR CHEESE
1-tsp. SALT AND PEPPER
THAW POTATOES, MIX IN 1/2 CUP MELTED MARGARINE. ADD REST OF INGREDIENTS. MIX WELL. PLACE IN 9X13 PAN. TOP WITH CRUSHED CORN FLAKES, POUR 1/4 CUP MELTED MARGARINE OVER TOP. BAKE @ 350 FOR 50 TO 60 .
CHERRY DELIGHT
2-CUPS GRAHAM CRACKER CRUMBS
1/2 CUP MARGARINE, MELTED
2 TBSP. SUGAR
8-OZ. CREAM CHEESE
2-CUPS POWDER SUGAR
1-(12 OZ.) CONTAINER COOL WHIP
1- (21 OZ ) CAN CHERRY PIE FILLING ,(I USE TWO CANS)
MIX GRAHAM CRACKER CRUMBS, MARGARINE,AND SUGAR.PRESS IN 9X13 PAN. MIX SOFTENED CREAM CHEESE WITH POWDER SUGAR UNTIL SMOOTH, FOLD IN COOL WHIP. SPREAD OVER CRUST,TOP WITH PIE FILLING. CHILL, MAY USE STRAWBERRY, BLUEBERRY, OR ANY OTHER PIE FILLING.
1 large Package fresh broccoli
1 large Can cream of mushroom soup 1 cup Shredded Chedder cheese 3/4 cup real mayonnaise (not salad dressing ) 1/4 cup Chopped onion (optional)
1/2 cup slivered almonds
1 large can durkee french fried onions.
Steam broccoli ; drain well.
Blend all ingredients, and Pour over broccoli.mix and place large baking dish .
Cover top with french fried onions Bake in preheated 350 degree oven for about 45 minutes or until bubbly and french fried onions are lightly browned. |

MOM'S BROWNIES Remove teddy bear from oven and preheat oven to 375. Melt 1 cup margarine in saucepan. Remove teddy bear from oven and tell Jr. "no, no." Add margarine to 2 cups sugar. Take shortening can away from Jr. and clean cupboards.
Measure 1/3 cup cocoa. Take shortening can away from Jr. again and bathe cat. Apply antiseptic and bandages to scratches sustained while removing shortening from cat's tail. Assemble 4 eggs, 2 tsp. vanilla, and 1-1/2 cups sifted flour. Take smoldering teddy bear from oven and open all doors and windows for ventilation. Take telephone away from Billy and assure party on the line the call was a mistake. Call operator and attempt to have direct dialed call removed from bill.
Measure 1 tsp. salt, 1/2 cup nuts and beat all ingredients well. Let cat out of refrigerator. Pour mixture into well-greased 9x13-inch pan. Bake 25 minutes. Rescue cat and take razor away from Billy. Explain to kids that you have no idea if shaved cats will sunburn. Throw cat outside while there's still time and he's still able to run away.
FROSTING
Mix the following in saucepan: 1 cup sugar 1 oz unsweetened chocolate 1/4 cup margarine Take the darn teddy bear out of the @#$% broiler and throw it away-- far away. Answer the door and meekly explain to nice policeman that you didn't know Jr. had slipped out of the house and was heading for the street.
Put Jr. in playpen.Add 1/3 cup milk, dash of salt, and boil, stirring constantly for 2 minutes. Answer door and apologize to neighbor for Billy having stuck a garden hose in man's front door mail slot. Promise to pay for ruined carpet. Tie Billy to clothesline. Remove burned brownies from oven. ***
